Zesty Tuna Pasta

answer! It’s a tasty dinner that uses limited ingredients straight from your pantry. The ingredients may be
simple, but the flavour is luscious. Use your favourite ceres gluten free past or feel free to zucchini noodles for
a grain free option

Ingredients

  • 1 large can (185g) wild sustainable tuna in water, drained.
  • 1 packet (4 servings) of ceres gluten free pasta

Sauce:

  • Zest of 1 lemon
  • 2 tsp lemon juice
  • 2 Tbsp of ceres mayonaise
  • 2 cloves garlic, minced
  • ¼ cup extra-virgin olive oil
  • 1 Tbsp honey or maple syrup
  • Handful of capers or chopped olives
  • 1 Tbsp fresh dill, finely chopped
  • 1 Tbsp fresh parsley, finely chopped
  • Pinch of salt and pepper (to taste)

Methods:

  1. Add all the sauce ingredients to a medium mixing bowl, whisking together until fully combined.
  2. Remove and drain the tuna fish from the can, then add to the mixing bowl with your sauce and let it marinade whilst preparing the pasta.
  3. Cook the gluten free pasta according to packet instructions. When cooked, drain and add to your mixing bowl with the sauce and marinading tuna.
  4. Toss altogether with tongs until thoroughly combined, making sure the pasta is evenly coated with the sauce and tuna.
  5. Optional: Garnish with more capers, lemon zest, fresh herbs, chilli flakes and season to taste. Can be enjoyed served either warm or cold, and paired with a side salad. Leftovers can be refrigerated and kept for lunch the next day!
