Teriyaki Salmon

Salmon is packed full of protein and omega 3. This teriyaki Salmon is a mouth-watering, nutrient dense recipe that pairs well with any desired sides. Serving warm over a bed of rice or kumara mash with fresh veggies, avocado and sauerkraut or kimchi. This is a quick easy recipe that both kids and adults love.
Ingredients:
- 2 salmon fillets (double for recipe if you have a larger family)
Marinade:
- ¼ cup coconut aminos
- 1 Tbsp honey
- 1 Tbsp of maple syrup
- 2 garlic cloves, pressed (optional)
- 1 tsp fresh ginger, finely grated
- 1 Tbsp fresh chives, finely chopped
- Optional: sprinkling of sesame seeds
Method:
- Mix all marinade ingredients together in a shallow dish.
- Place the salmon fillets flesh side down into the marinade, cover and refrigerate for a minimum of 30 minutes. For a stronger flavour, leave the fillets to marinade for up to 1 hour.
- Preheat the oven to 180 degrees C (350 degrees F).
- Place the salmon fillets onto a lined baking tray, skin-side down for best results and crispy skin. Pour the remaining marinade over the salmon fillets.
- Bake for 15-20 minutes, until when gently pressed with a fork, the fish will easily flake apart. Avoid over-cooking, as it can dry out the salmon.
- Optional: add a sprinkling of sesame seeds and/or fresh chives over the top of the sticky salmon
