Ingredients:

  • 2 salmon fillets (double for recipe if you have a larger family)

Marinade:

  • ¼ cup coconut aminos
  • 1 Tbsp honey
  • 1 Tbsp of maple syrup
  • 2 garlic cloves, pressed (optional)
  • 1 tsp fresh ginger, finely grated
  • 1 Tbsp fresh chives, finely chopped
  • Optional: sprinkling of sesame seeds

Method:

  1. Mix all marinade ingredients together in a shallow dish.
  2. Place the salmon fillets flesh side down into the marinade, cover and refrigerate for a minimum of 30 minutes. For a stronger flavour, leave the fillets to marinade for up to 1 hour.
  3. Preheat the oven to 180 degrees C (350 degrees F).
  4. Place the salmon fillets onto a lined baking tray, skin-side down for best results and crispy skin. Pour the remaining marinade over the salmon fillets.
  5. Bake for 15-20 minutes, until when gently pressed with a fork, the fish will easily flake apart. Avoid over-cooking, as it can dry out the salmon.
  6. Optional: add a sprinkling of sesame seeds and/or fresh chives over the top of the sticky salmon
