Sweet and Sticky Chicken

Ingredients

  • 20 g tomato paste
  • 1 Tsp olive oil
  • 2 t chopped garlic
  • ⅛ t cumin
  • ½ t chilli powder
  • ½ t ground mustard seeds
  • ⅓-½ fresh pineapple (blend it in a blender)
  • ⅓ c maple syrup
  • ¼ c apple cider vinegar
  • 1 t salt

Chicken thighs or drumsticks or wings

Instructions

  1. Preheat oven to 180 degrees
  2. Heat the olive oil in a frying pan on a medium heat, add tomato paste, garlic, cumin,
    chilli powder and ground mustard to oil and saute for 30 seconds.
  3. Add blended pineapple, maple syrup, apple cider vinegar and salt to pan and bring to boil reduce heat and simmer let sauce cook for 5 mins
  4. Place chicken in a baking dish and pour sauce over bake in the centre of the oven for approx 60 mins until chicken is cooked
