Super-Green Banana Pikelets

These Super-Green Banana Pikelets are just that…super! Spinach is a rich source of major micronutrients such as iron, manganese, zinc and magnesium. This recipe is a perfect way to sneak in those extra veggies, especially with little ones! These pikelets are deliciously light and fluffy. You can make these savoury or sweet depending on your desired toppings and breakfast sides. They make great lunchbox additions or smooched together with a nutritious spread (chia jam, nut or seed butter) to make pikelet sandwiches!
Ingredients:
- 250g fresh baby spinach
- 3 large bananas, overripe
- ¼ cup coconut flour, sifted
3 large eggs - 225ml coconut milk (or other preferred milk)
- ½ tsp natural vanilla paste
- 1 tsp ground cinnamon (optional for a subtle sweet spice)
- ¼ tsp baking soda
- 1 Tbsp coconut oil
Method:
- In a high-speed blender, blend the coconut milk and spinach together until you get a smooth consistency. The milk should now have a nice green colour.
- In a large mixing bowl, whisk the eggs until they get fluffy, Add the blended milk and spinach mixture to the eggs. Then add in the vanilla.
- Add in the remaining ingredients; coconut flour, cinnamon and baking soda. Mix well until fully combined.
- Heat a frying pan over medium heat with a half of the coconut oil. Using 2-3 Tbsp of batter for each pikelet, cook them in batches for 5 minute son one side, then flip them over and cook the other side for about 3-5 minutes. Transfer the pikelets to a plate and keep warm while cooking the rest of the batter.
Use the other half of the coconut oil, as needed to regrease the pan, mid-way through cooking. - Serve warm, with your favourite toppings and breakfast sides.
Topping and sides ideas: grilled bacon, fresh fruit (banana and berries), coconut yogurt, honey or maple syrup, toasted seeds (or nuts if nut tolerant), and coconut.
