Slow Cooked Maple Chicken

This Slow Cooker Maple Mustard Chicken such an easy, warming and comforting dinner! Perfect for busy family’s just pop it in the slow cooker with all the ingredients and let simmer away.
It is the perfect balance of rich, sweet and savoury. It pairs well with a generous serving of our Rocket Salad with Lemon Vinaigrette on the side and a small portion of rice or a kumara or potato mash to soak up the rich sauce. Ingredients

  • 3-4 large boneless and skinless chicken breasts or thighs
  • ¼ cup Dijon mustard
  • ¼ cup maple syrup
  • 1 Tbsp apple cider vinegar
  • Pinch of each salt and pepper, to taste
  • ½ cup fresh parsley, finely chopped

Method:

  1. In the bowl of a large slow cooker, stir together the Dijon mustard, maple syrup, and apple cider vinegar until smoothly combined.
  2. Add in the chicken, alongside a pinch of salt and pepper to the slow cooker. Use tongs to flip the chicken over a few times until fully coated with the sauce. Cover the slow cooker and cook on low for 3-5 hours, until fully cooked through.
  3. Once cooked, turn off heat or to warm, and top the chicken with chopped parsley. Serve immediately with your favourite sides.
