Simple Strawberry Vinaigrette

This Simple Strawberry Vinaigrette has changed the game for eating and enjoying salads! It’s a very quick, easy and tasty dressing option that compliments many dishes, proteins and flavours. We recommend dressing it over any salad and/or grilled meats like chicken or pork! This dressing is sweet, fresh, tangy and will make you love eating your veggies!
Ingredients:
- 1 ½ cup fresh or frozen strawberries, (prepared as step 1)
- 2 Tbsp honey or maple syrup
- 2 Tbsp apple cider vinegar
- 2 Tbsp extra virgin olive oil or avocado oil
- Small pinch of each salt and ground black pepper
- Optional: 1 Tbsp fresh mint leaves, finely chopped
Method:
- IPrepare the fresh strawberries by rinsing them, removing the tops, then slicing them in halves so they blend more easily. You can also use fresh raspberries to make this a raspberry vinaigrette.
- Combine all of the ingredients into a high-speed blender, then blend altogether until fully combined and smooth.
- Serve as desired. Leftovers of this dressing will keep chilled in the fridge for up to 1 week.
Optional: For a minty, complimentary flavour profile with the strawberry, add in the mint before or after blending too (depending on your desired final texture either hiding or showcasing the mint).
