SALMON MASON JAR SALAD WITH MUSTARD DRESSING

Save your jars! A single serve easy lunch, full of omega 3 and crunchiness layered into a jar is so appealing to the eye. Ensure you use the right ingredient amount of avocado due to its small serving size of low fodmap.

 Ingredients: 

  • 70g fresh salmon fillets
  • ¼ cup small diced cucumber
  • ¼ cup red capsicum, diced
  • 2 tbsp diced avocado
  • 1 cup lettuce of your choice
  • Dressing: 
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • ½ tsp Dijon mustard

Method: 

  1. Pre healt oven to 220deg celcius. Place salmon fillet in oven dish, remove any bones, drizzle with olive oil and rub with salt and pepper, bake for 10-12 minutes.
  2. While salmon cooks, mix together dressing and prepare vegetables.
  3. Once salmon is cooled, shred with fork.
  4. Place in jar in this order – dressing, cucumber, capsicum, avocado, salmon and lettuce.
  5. When you’re ready to eat shake the jar to coat the eat with fork.
