Rocket Salad with Lemon Vinaigrette

This recipe has become a go-to, delicious and ridiculously simple salad…all-year-long! This Rocket Salad with Lemon Vinaigrette makes the perfect base to get creative adding in any preferred garnishes for extra crunch, texture and complimentary flavours. It’s perfect to prepare in bulk, and have on hand for weekly lunches, dinners, etc. This salad keeps well stored in an airtight container in the fridge for 3 days. It’s tasty on its own or incredibly versatile served alongside your favourite protein and side dishes. Most of all, its highly nutritious as the rocket provides one of your 5-a-day, and a rich source of folate, calcium and vitamin C!

Ingredients:

  • 5 cups fresh rocket (arugula)
  • Freshly ground black pepper, to taste

Lemon Vinaigrette:

  • ¼ cup extra virgin olive oil
  • ¼ cup lemon juice (from 2 large lemons, freshly squeezed)
  • 2 tsp lemon zest (from 1 lemon)
  • 1 Tbsp apple cider vinegar
  • 1-2 tsp honey or maple syrup (to taste)
  • Small pinch of salt, to taste

Method:

  1. To make the Lemon Vinaigrette: To a mixing bowl or small jar, add in all of the lemon vinaigrette ingredients together. If using a mixing bowl, whisk the vinaigrette until well combined. If using a jar, place the light on tightly and shake until well combined.
  2. Add the rocket to a large serving/salad bowl. Drizzle the Lemon Vinaigrette over the rocket, tossing with tongs or salad servers to combine. This salad is best enjoyed immediately and garnished with a few extra cracks of black pepper.


Optional garnishes: roasted nuts (if nut tolerant), sesame or pumpkin seeds, chopped fresh fruit (strawberries, blueberries, pear, pomegranate), dried fruit (raisins)
