Quinoa Crackers

Makes approximately: 2 servings

Total time: 60mins

Crackers are an all time favourite pantry staple, versatile and a family favourite. It’s always handy to have some crackers to add toppings for a light snack. These quinoa crackers can be topped with savory or something sweet like a chia seed jam. Add other dried herbs or salt to the recipe for extra flavour if you desire.

Ingredients:

  • ⅛ cup quinoa, cooked (dry weight)
  • ½ cup pumpkin seeds
  • ¼ cup sesame seeds
  • ⅛ cup chia seeds
  • ⅛ cup flaxseed / linseed
  • 1-2 teaspoon dried herbs optional
  • pinch salt
  • ½ cup water

Method:

  1. Preheat the oven to 170C and line a baking tray with parchment paper.
  2. Add all the seeds to a bowl, along with the herbs, salt and water. Stir well and set aside for 15 minutes until the mixture turns to a gelatinous texture. Add a touch more water if it appears too dry.
  3. Spoon your quinoa into the bowl (try not to include any excess water) and mix well.
  4. Spread onto your baking sheet and use a spatula to form an even layer about ½cm thick.
  5. Bake for 30 minutes. Remove from the oven and carefully slice into the cracker size you prefer, then flip each cracker.
  6. Bake for a further 15-20 minutes or until they are a very light golden brown and hold together.
  7. Leave to cool on a wire rack.
