Pistachio and Date Truffles

These truffles offer a wholesome alternative to satisfy sweet cravings! They are not only quick and easy to prepare but also ideal for making in large quantities and suitable for freezing. The dates deliver a naturally sweet taste, complemented by any nut of your choice for added crunch and protein. You'll no longer feel the urge to grab processed treats with these babies on hand!!

Ingredients:

  • 3 Tbsp raw cacao powder
  • 1 ½ cups Medjool dates, deseeded
  • 3 Tbsp preservative free shredded coconut
  • ½ cup organic pistachios, crushed (or other preferred organic nut, crushed)
  • Pinch of salt (to taste)

Methods:

  1. In a blender or food processor, place cacao powder, dates and coconut.
  2. Pulse the mixture a few times, pushing the mixture down onto the blades, until all is just combined.
  3. Roll the mixture into 1 Tbsp sized balls.
  4. Then coat each one by rolling it through the crushed pistachios until fully covered.
  5. Refrigerate in an airtight container
