Paleo Banana Bread

This Paleo Banana Bread is an all-time favourite! With a few simple, wholesome ingredients and minimal effort, this loaf will be making your house smell delicious in no time. Serve it warm, on its own or with a slather of your favourite healthy spread on top. Great afternoon snack with a smoothie or a lunchbox filler as it is high in protein for little ones.

Ingredients:
- 4 overripe bananas (the riper, the sweeter)
- 4 eggs
- ½ cup nut butter ( almond butter works well)
- 4 Tbsp coconut oil, melted
- ¼ cup coconut flour
- ¾ cup almond meal
- 1 Tbsp chia seeds
- 1 Tbsp cinnamon
- 1 tsp baking soda
- 1 tsp natural vanilla paste
- Pinch of salt
- 2 Tbsp maple syrup (optional for extra sweetness)
Method:
- Preheat the oven to 180 degrees C (350 degrees F) and prepare a lined or greased oven loaf pan.
- Lightly mash the bananas into a large mixing bowl, leaving clumps. Either to the same bowl, or using a food processor, add in the eggs, almond butter, coconut oil (and maple syrup if using) and mix well until fully combined.
- Now add in the flours, cinnamon, chia seeds, baking soda, vanilla and salt to the batter and combine thoroughly.
- Pour the batter into the loaf pan and spread it evenly (either with a spatula or by gently tapping the bottom of the loaf pan against the counter a few times).
- Place in the centre of the oven and bake for around 35-40 minutes until evenly cooked, browned on the outside but still fluffy on the inside. Check at 35 minutes, with a knife poking through the top quickly, to ensure the middle stays moist and the knife comes out clean (signaling its fully cooked inside).
- Remove from the oven and gently flip the loaf onto a cooling rack, waiting for a few minutes before serving.
Optional, for Paleo Banana Muffins: Use/follow the same recipe and bake for approximately 30 minutes in a lined or greased muffin tray.
