Low Fodmap Chicken Cacciatore

Tender juicy chicken in a savory, tomato-olive sauce. An easy one pot meal that can be easily enjoyed with a side of your favourite mash and vegetables.
Ingredients:
- ¼ cup garlic infused olive oil
- 500g chicken thighs (bone in or out is fine)
- 1 medium carrot, peeled and sliced into rounds
- ½ red bell pepper, diced
- ½ cup low fodmap broth
- 1 can plain crushed tomatoes
- 1 ½ tsp dried oregano
- 2 tbsp capers
- 1/3 cup halved kalamata olives
- Optional for garnish: thinly sliced basil or chopped parsley
Method:
- In a large skillet, heat olive oil over medium-high heat. Season chicken with salt and pepper. Once hot, sear each side for about 2 mins.
- Add carrot, bell pepper, broth, tomatoes and oregano. Stir and bring to boil, reduce heat and simmer for approx. 15-25mins or until chicken is cooked. Cooking time is longer with bones.
- Stir in capers and kalamata olives and continue heating until everything is warm.
- Garnish and serve warm.
