Low Fodmap Chicken Cacciatore

Tender juicy chicken in a savory, tomato-olive sauce. An easy one pot meal that can be easily enjoyed with a side of your favourite mash and vegetables.

Ingredients:

  • ¼ cup garlic infused olive oil
  • 500g chicken thighs (bone in or out is fine)
  • 1 medium carrot, peeled and sliced into rounds
  • ½ red bell pepper, diced
  • ½ cup low fodmap broth
  • 1 can plain crushed tomatoes
  • 1 ½ tsp dried oregano
  • 2 tbsp capers
  • 1/3 cup halved kalamata olives
  • Optional for garnish: thinly sliced basil or chopped parsley

Method:

  1. In a  large skillet, heat olive oil over medium-high heat. Season chicken with salt and pepper. Once hot, sear each side for about 2 mins.
  2. Add carrot, bell pepper, broth, tomatoes and oregano. Stir and bring to boil, reduce heat and simmer for approx. 15-25mins or until chicken is cooked. Cooking time is longer with bones.
  3. Stir in capers and kalamata olives and continue heating until everything is warm.
  4. Garnish and serve warm.
