Grainfree Tortillas
Ingredients:
- 2 eggs
- 1/2 cup full-fat coconut milk (can substitute both liquids for 1 cup almond milk if preferred)
- 1/2 cup water
- 4 tbsp tapioca flour
- 3 tbsp coconut flour
- 1/4 tsp sea/himalayan salt

- In a small bowl, whisk the eggs together lightly. Add the
- Add the coconut milk and water and whisk until the consistency is even. Sift in the tapioca flour, and coconut flour and add the salt.
- Whisk until well combined. Allow to sit for 5 mins for the coconut flour to absorb nicely.
- Heat a heavy-bottomed pan to a medium heat.
- Grease with coconut oil then pour in mixture to make the size tortillas you want (I make mine about the size of a bread plate).
- Use the back of the scooping spoon to spread out the mixture to a nice circle.
- Cook for 3-5mins, flip, then cook the other side. Continue the process until the mixture is gone and BAM; you have yourself some grain-free tortillas! Serve with mince, pulled pork (or any meats) and a large salad.
