Frittata with Bacon, Capsicum & Spinach

Makes approximately: 4 servings

Not only an easy recipe but very colourful and tasty for the perfect breakfast, brunch or easy weeknight meal. Note: Red bell pepper is not considered completely fodmap free so ensure quantities are adhered to.

Ingredients

  • 4 slices bacon 
  • 2 tbsp olive or coconut oil 
  • ½ cup diced red bell pepper 
  • ½ fennel seeds
  • ½ cup diced green bell pepper 
  • 1 cup spinach, finely chopped 
  • 10 large eggs, whisked 
  • 2 tbsp minced chives, optional

Method:

  1. Pre-heat oven 
  2. In a cast iron or oven safe skillet, cook bacon until crispy. Once cooked, remove bacon and dice, set aside.
  3. In empty hot skillet, add oil, bell peppers and cook until tender. Stir in spinach and wilt. Return the cooked bacon to skillet. 
  4. Add chives to whisked eggs. Pour eggs over veggies and bacon, stir together. 
  5. Cook for further 4 minutes then place skillet under the preheated oven to continue to cook until done, about 5 mins. Remove and allow to cool slightly.
