Chocolate Strawberry Coconut Yogurt Clusters

Makes approximately: 10 clusters.
Total time: 30 minutes.

This healthy sweet treat is a crowd favourite on a hot summer’s day! Not only do these clusters taste sensational, but they are very easy to make. They have a satisfying bite, are irresistibly creamy, crunchy, sweet and tangy. You can also get creative with using different fruits or adding in different mix-ins to the yogurt mixture such as chopped nuts, nut or seed butter, granola and shredded coconut.

Ingredients

  • 1 ½ cup chopped fresh or frozen strawberries
  • 1 cup coconut yogurt
  • 1 Tbsp honey or maple syrup
  • 1 tsp vanilla extract
  • 1 cup dark chocolate chips (or dark organic chocolate)
  • 2 Tbsp coconut oil
  • Optional: Sprinkle sea salt

Method:

  1. Line a baking tray or large plate with baking paper and set aside.
  2. Add the chopped strawberries, coconut yogurt, honey and vanilla extract to a large bowl. Mix well until fully combined.
  3. Add scoops of the yogurt mixture, about 2 Tbsp each in size, onto the prepared tray or plate. You should have enough to make around 10 clusters.
  4. Place the clusters in the freezer and freeze until they are completely frozen and solid, about 1-2 hours.
  5. Once the clusters are completely frozen, melt the dark chocolate and coconut oil
  6. Remove the frozen clusters from the freezer and carefully dip each one into the melted chocolate until fully coated. Once fully coated with chocolate, place each cluster back onto the lined baking tray or plate. Optional: Add a pinch of sea salt to the top of each cluster for a salty sweet taste.
  7. Place the clusters back in the freezer for 5-10 minutes to ensure the chocolate hardens and yogurt solidifies a little more.
  8. Let them thaw for a few minutes before eating, and enjoy!
