Budda Bowl

Ingredients:

Choose ingredients from each section to make a bowl you love!!! 

  1. One Whole grain: rice, quinoa or buckwheat
  2. One Protein: Tofu, Tempeh, sprouts, meat or egg 
  3. Roast Root Veggies: Roasted pumpkin/kumara/beetroot in olive oil, salt and pepper 
  4. Veggies: Avocado, Carrot, Beetroot, Cucumber, Celery, snow peas, green beans, tomatoes, capsicum, radish 
  5. Greens: leafy greens, microgreens, shredded cabbage (red and green), sauerkraut 
  6. Dressing
  • 3 tbsp of one of these types of butter almond butter, peanut butter, cashew butter, or sunflower seed butter
  • Juice of 1 lemon
  • 2 tbsp coconut aminos
  • 1 teaspoon ginger, grated
  • 1.5 tbsp apple cider vinegar
  • ⅓ cup olive oil
  • Blend till well combined

7. Nuts or seeds (pumpkin seeds, sesame seeds, sunflower seeds, pecans, almonds, walnuts, peanuts etc.)

Make enough so you can have the same for lunch the next day!
