Budda Bowl

Ingredients:

Choose ingredients from each section to make a bowl you love!!! 

  1. One Whole grain: rice, quinoa, buckwheat
  2. One Protein: Tofu, Tempeh, sprouts or egg
  3. Roast Root Veggies: Roasted pumpkin/kumara/beetroot in olive oil, salt and pepper 
  4. Veggies: Avocado, Carrot, Beetroot, Cucumber, Celery, snow peas, green beans, tomatoes, capsicum, radish
  5. Greens: leafy greens, microgreens, shredded cabbage (red and green), sauerkraut
  6. Dressing
  • 3 tablespoons tahini (ceres)
  • 1/4 –1/3 cup warm tap water, more to desired consistency.
  • 1 –2 tablespoons lemon juice (more to taste)
  • 1–2 tablespoon olive oil
  • 1-2 garlic cloves (finely minced – use a garlic press)
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon coconut aminos
  • Blend till smooth

7. Nuts or seeds- pumpkin seeds, sesame seeds, sunflower seeds, pecans, almonds, walnuts, etc.

Make enough so you can have the same for  lunch the next day!
