Budda Bowl
Ingredients:
Choose ingredients from each section to make a bowl you love!!!
- One Whole grain: rice, quinoa, buckwheat
- One Protein: Tofu, Tempeh, sprouts or egg
- Roast Root Veggies: Roasted pumpkin/kumara/beetroot in olive oil, salt and pepper
- Veggies: Avocado, Carrot, Beetroot, Cucumber, Celery, snow peas, green beans, tomatoes, capsicum, radish
- Greens: leafy greens, microgreens, shredded cabbage (red and green), sauerkraut
- Dressing
- 3 tablespoons tahini (ceres)
- 1/4 –1/3 cup warm tap water, more to desired consistency.
- 1 –2 tablespoons lemon juice (more to taste)
- 1–2 tablespoon olive oil
- 1-2 garlic cloves (finely minced – use a garlic press)
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 tablespoon coconut aminos
- Blend till smooth
7. Nuts or seeds- pumpkin seeds, sesame seeds, sunflower seeds, pecans, almonds, walnuts, etc.
Make enough so you can have the same for lunch the next day!
