Avocado Lime Dressing

Makes approximately: 1 cup.

Ingredients

  • 1 bunch fresh coriander (about
  • 2 cups, stems and all)
  • 2 fresh garlic gloves, minced (about 1 heaped teaspoon) optional
  • 3 Tbsp lime juice
  • 1 Tbsp lime zest
  • 6 Tbsp extra virgin olive oil
  • Pinch of salt, to taste
  • 1 avocado
  • Optional: 1-2 Tbsp water (if needed to thin out the dressing)
  • Optional: 1 tbsp honey or maple syrup (if vegan), to slightly sweeten

Method:

  1. Prepare the coriander by washing and drying it well before use.
  2. Combine all of the ingredients together in a high-speed blender and blend until smooth. Taste and season to your liking, adding extra water to thin out the dressing, honey or maple syrup for subtle sweetness.
  3. Serve as desired. Leftovers of this dressing will keep chilled in the fridge for up to 5 days.
