5 Ingredient Sweet Potato Cakes

Makes approximately: 4 servings.
Total time: 15-20 minutes.

Not only are these little cakes very quick and easy to make using only 4 ingredients, but they are also very versatile and can be made either sweet or savoury. To enhance sweetness, add in 2 Tbsp of maple syrup to the batter. For a savoury version, leave out the vanilla extract, add in some curry powder, pepper and chopped fresh herbs to the mixture. Whichever direction you take these little cakes are sure to be a hit with the whole
family!

Ingredients:

  • ½ cup mashed sweet potato
  • 2 regular eggs
  • 1-2 tsp ground cinnamon
  • ½ tsp vanilla extract
  • Pinch of salt
  • 1 Tbsp coconut oil

Method:

  1. Place the sweet potato, eggs and cinnamon into a food processor, with a pinch of salt. Blend altogether until a smooth batter has been reached.
  2. Heat the coconut oil in a non-stick frying pan over medium heat.
  3. Drop 4 Tbsp of batter into the pan and cook for 3-5 minutes each side (using a spatula to flip), or until lightly golden and fully cooked through.
  4. Serve warm with your favourite breakfast sides and toppings such as grilled bacon, fresh fruit, coconut yogurt, honey or maple syrup, nut or seed butter
